Ingredients:
• 6 medium Cucumbers (grated) • 1 cup Yogurt • 2 Green Chillies (chopped) • 1/2 tsp Sugar • 1 tsp Lemon Juice • Salt to taste • 2 tbsp Fresh Coriander Leaves (chopped) • 2 tbsp Coconut (scraped)
How to make Cucumber Koshimbir:
In a bowl, whisk the yogurt until smooth.
Add grated cucumber, chopped green chillies, sugar, lemon juice and salt and mix all the ingredients well. Check the seasoning.
Top it up with scraped fresh coconut and chopped coriander leaves.
Serve chilled.
