Chicken Parmesan



Mmm... A very delicious chicken dish that's pretty easy to make.
 

Ingredients

  • 4 boneless and skinless chicken breast halves
  • 1 egg, slightly beaten
  • 1 cup seasoned bread crumbs
  • 2 tablespoon margarine
  • 1/2 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Directions

    1. 1.Using palm of hand flatten chicken to even thickness. Dip chicken into egg then into crumbs to coat.
    2. 2.In skillet over medium heat, in hot margarine, brown chicken on both sides. Add tomato sauce. Reduce heat. Cover; simmer 10 minutes.
    3. 3.Sprinkle with cheeses and parsley. Cover; simmer 5 minutes or until cheese melts. Serve hot with spaghetti.

Chicken Pasta Primavera



This chicken, pasta and vegetables is very popular with todays busy families. This recipe calls for a creamy sauce which makes for a quick and easy meal that is sure to be a big hit with the family.

Ingredients

  • 2 cups uncooked spiral pasta (any small pasta noodle may be used)
  • 1 pound boneless skinless chicken breasts, cubed
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 package (16 ounces) frozen broccoli, cauliflower and red pepper blend (or the like), thawed
  • 3/4 cup heavy whipping cream
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Directions

    1. 1.Cook pasta according to package directions.
    2. 2.Meanwhile, in a large skillet, saute chicken and garlic in butter until chicken is no longer pink.
    3. 3.Add the vegetables and heavy cream; cook until vegetables are tender.
    4. 4.Add the cooked pasta, parmesan cheese, salt and pepper to the skillet; cook and stir until heated through.
