Oondiya


Oondiya is prepared by Gujarathi's during Sankranthi.
Ingredients
Broad beans - 1/4 kilo
Potato  - 100  gm
Yam - 100  gm
Sweet potato - 100  gm
Brinjal - 100  gm
Raw plantain -  1
Ajwain - 1 tsp
Coconut ( grated ) - 1/4 cup
Ginger -  2 small pieces
Garlic - 3 pods
Green chilli - 5
Garam masala - 1/4 tsp
Coriander leaves - a handful
Asafoetida - a pinch
Fenugreek leaves - 1 cup
Wheat flour - 1/4 cup
Bengal gram flour  - 1/4 cup
Lime juice - 2 tsp
Sugar - 2 tsp
Salt - as needed
Oil   - as needed
Method

1. Grind coconut, a small piece of ginger, garlic, 3 green chillies, coriander leaves to a paste.
2. Grate a piece of ginger and cut 2 green chillies finely.
3. Mix fenugreek leaves, wheat flour, bengal gram flour, lime juice, sugar, salt, grated ginger, green 
chilli, garam masala with water to a dough.
4. Steam the dough and cut into cubes when cool.
5. Cut broad beans, potato, sweet potato, yam, brinjal, raw plantain into large pieces.
6. Heat oil in a frying pan.
7. Add ajwain, vegetables, asafoetida, salt, water and cook.
8. When the vegetables are cooked, add fenugreek cubes, ground paste and stir well. 
9. When the contents have boiled well, switch off the stove.
