Ingredients:
• 50 gm Ginger • 1 tsp Tamarind paste • 1 tbsp Jaggery • 1 tsp Chilli powder • Salt to taste • Oil as required
How to make Ginger Chutney:
Scrape the skin of the ginger and cut it into big pieces.
Take a pan and heat with ½ tbsp of oil.
Fry the pieces in oil heated in a pan, allow cooling and then grind them to make a fine paste without water in a mixie.
Again fry the ginger paste in oil along with the tamarind paste.
Add salt, chilli powder to it and boil it for a while.
Now combine jaggery with it, mix well.
When the chutney reaches jam consistency remove it from the fire.
Serve ginger chutney with plain white rice and ghee.

Ingredients:
• 4 cup Rice (boiled) • 3 Onions large (finely grinned) • 2 Tomatoes large (finely sliced) • 3 Cloves (finely grinned) • 3 Anise (crushed finely) • 2 tsp Coriander Seeds (finely grinned) • 1 tsp Turmeric • 50 gm Peas • 50 gm Corn • 200 gm Yogurt • 250 gm Fish (sliced) • 4 tbsp Butter • Salt to taste
How to make Fish Rice:
Marinate the fish by mixing it with yogurt, salt, onions and all spices.
Put it in the fridge for an hour.
On to a medium heat flame place a non-stick pan and add the butter.
Fry the fish slices golden brown and put it aside.
Add the marinade liquor in a baking pan, fish and butter.
Top it with rice, tomatoes, peas, corn, butter and rest of the marinade liquid then bake it for half an hour in a preheated oven.
Once the oven lid becomes cool open it after switching it off then stir the mixture.
Suggestions:
Serve best with tomato curry or mint mixed chili sauce.

• To grind: • 2 Red Chilies • 3 tsp Coriander Seeds • 1 tsp Fennel Seeds • 1 Cinnamon • 2 Cloves • 1 tsp Cumin • 1/4 tsp Fenugreek Seeds • 1 tsp Rice • 1 tsp Pepper • 3 tbsp Coconut (grind) • To Fry: • 1/4 tsp Turmeric Powder • 1 Onion (chopped) • 1 Tomato (chopped) • 4 - 6 Brinjal (small size) (slice on top without cutting into pieces) • 1 tbsp Tamarind Juice (optional) • 3 tbsp Oil • 1/2 tsp Mustard Seeds • 1/2 tsp Urad Dal (Split Bengal Gram) • 1/2 tsp Chana Dal (Split Black Gram) • 1 twig Curry Leaves • 2 twig Coriander Leaves
How to make Ennai Kathirikai Fry:
Fry all the grind ingredients with little oil and make a paste.
Add ground coconut into the paste.
Boil urad dal, chana dal with 1 cup of water.
Take a pan and heat oil.
Add mustard seeds, curry leave in the oil and allow it to splutter.
Add onion and fry it till brown.
Put brinjals and fry it for a min.
Add the grinded paste with water into the brinjal.
Put chili powder, salt and turmeric powder and let it cook for 10 min till the masala & brinjal get cooked.
Add tamarind juice and give it a boil.
Mix it till oil separates.
Garnish it with coriander leaves.
Suggestions:
Serve with rice

DOODH PEDA RECIPE

Ingredients:
• 2 cups Milk (Powder) • 3 tbsp Butter (unsalted) • 1/2 cup Milk • 1/2 cup Sugar • 1/2 cup Water • 4 Cardamoms (crushed) • 1 tbsp Pista (crushed) 
How to make Doodh Peda:

Mix butter and milk powder, and add milk to make soft dough.
Refrigerate the dough for 15 minutes.
Crumble it with your finger breaking all the lumps.
Make sugar syrup of one strand and put the crumbled dough.
Keep stirring till it starts leaving the pan.
Remove it when it starts leaving the pan and cool it lightly.
Make small balls and flatten it into a shape of Peda
Decorate it with cardamom and pista powder on the top.
Suggestions:
Serve it chilled

DAL VADA RECIPE

Ingredients:
• ½ big Onion (chopped finely) • 1 cup Chana Dal (soaked in water for 3-4 hrs) • 3-4 Curry Leaves (chopped finely) • 2 Green Chilies (low spiced) • Oil for deep frying • Salt as per taste • ½ tbsp Grated Coconut (fresh/frozen) • Pinch of Asafetida (Hing) • ½ tsp Red Chili Powder • 1 tbsp Rice Flour
How to make Dal Vada:
Pulse the green chilies in a blender till they are coarsely grounded.
Drain out water from the soaked dal and pulse it a couple of times. The dal should not become a paste it should be just coarsely ground.
Mix all ingredients except oil.
Take a heavy bottomed pan and heat oil in it. Alongside take small dumplings out of dal mixture and flatten them in between your palms.
Drop these dumplings or Vada into the oil and depp fry them. Make sure the heat is between low-medium, because if the heat is high the outer portion cooks faster than the inner one giving you a semi-cooked or burnet Vada.
Once done remove the Vada from oil and drain it on a paper towel.
Serve it hot with coconut chutney.

COORGI ROTI RECIPE

Ingredients:
• 1 ½ cup Rice (cooked) • 2 cups Rice Flour • 1 ½ tsp Salt • Water (as required) • Ghee/oil (as required)
How to make Coorgi Roti:
Take a bowl and mix the rice flour and salt. Don't forget to sieve the rice flour before using.
Blend the cooked rice with two tablespoons of water in a mixer.
Now add the cooked rice mixture to the rice flour and mix well.
Knead it into a dough by mixing enough water.
Cover the dough with a wet muslin cloth and keep it aside for some time.
Now take a small portion of the dough and make a round ball.
Then roll it up giving it the shape of a roti
Repeat the process with the rest of the dough.
Cook the rotis in a tawa with little oil or ghee till brown specks appear.
Smear the rotis with ghee and serve them hot with chutney or pickle.

COCONUT THOKAYAL RECIPE

How to make Coconut Thokayal:
Take a pan and heat little oil.
Fry urad dal, channa dal, mustard, red chillies, green chillies, hing, tamarind paste and curry leaves.
Add coconut and wet grind this with salt.
