Mmm... A very delicious chicken dish that's pretty easy to make.
Ingredients
- 4 boneless and skinless chicken breast halves
- 1 egg, slightly beaten
- 1 cup seasoned bread crumbs
- 2 tablespoon margarine
- 1/2 cup tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon grated parmesan cheese
- 1/4 cup chopped fresh parsley
Directions
- 1.Using palm of hand flatten chicken to even thickness. Dip chicken into egg then into crumbs to coat.
- 2.In skillet over medium heat, in hot margarine, brown chicken on both sides. Add tomato sauce. Reduce heat. Cover; simmer 10 minutes.
- 3.Sprinkle with cheeses and parsley. Cover; simmer 5 minutes or until cheese melts. Serve hot with spaghetti.

- 2 cups uncooked spiral pasta (any small pasta noodle may be used)
- 1 pound boneless skinless chicken breasts, cubed
- 2 garlic cloves, minced
- 2 tablespoons butter
- 1 package (16 ounces) frozen broccoli, cauliflower and red pepper blend (or the like), thawed
- 3/4 cup heavy whipping cream
- 3/4 cup grated parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
- 1.Cook pasta according to package directions.
- 2.Meanwhile, in a large skillet, saute chicken and garlic in butter until chicken is no longer pink.
- 3.Add the vegetables and heavy cream; cook until vegetables are tender.
- 4.Add the cooked pasta, parmesan cheese, salt and pepper to the skillet; cook and stir until heated through.
