Ingredients:
• For the Cake • 4 Eggs • ½ cup Oil • 1½ cups Sugar • 2 cups Flour • 11/3 cups unsweetened Coconut (grated) • 4 tsp Baking Powder • Salt to taste • ½ cup Milk • ¼ cup fresh Lemon Juice • 1 Lemon (zest) • 1 tsp Vanilla

For the Icing and Garnishing 
• 1 cup Powdered Sugar (sifted) • 3 tbsp Cream • 1tsp Vanilla • ½ cup Sweetened Coconut (toasted)
How to make Coconut Lemon Cake:
Preheat the oven at 350° F. Butter and flour a cake pan.
Take eggs with sugar in a bowl and beat until it thickens. Next beat it slowly adding oil with vanilla, lemon juice and zest.
In a separate bowl, put in flour with coconut, baking powder, salt, milk and beat it well.
Next mix it in lemon and vanilla mixture. Transfer the mixture to the cake pan and bake it for 40 min or until it is done. Then let it cool and remove from the pan.
Take all the ingredients of icing except coconut in a bowl and blend it well. Spread the icing over the cake and sprinkle over toasted coconut.

COCONUT FISH CURRY RECIPE

Ingredients:
• 2 Onions (finely grinned) • 50 gm Garlic paste • 20 gm Coriander Powder (Dhania) • 10 Red Chilies • 4 Kokams (finely grinned) • 1 cup Coconut Milk • 500 gm Fish large (sliced) • Oil 
How to make Coconut Fish Curry:
In a medium heat flame, place heavy bottomed saucepan and pour oil into it.
Lower the flame when the oil boils then add the onions.
Stir till it turns golden brown then next add the other spices one by one.
Five minutes after stirring add the coconut milk to it.
Add water to it after 10 minutes then boil it for two minutes after mixing salt to it.
In the hot spicy liquid,add the fish then lower the flame and seal the saucepan.
For ten minutes,allow it to simmer or when cooked then add the kokam.
Cook it till the gravy becomes little dry.
Suggestions:
Best serve it with rice, pulao or veg-briyani.

COCONUT CORN RECIPE

Ingredients:
• 3 Corn Cobs • 3 tbsp Oil • 1 tsp Mustard Seeds • 1 tbsp Curry Leaves • 2 Tomatoes (grated) • 1 tbsp Gram Flour • 2 cups Coconut Milk • Salt (to taste) • 2 tbsp Coriander Leaves (chopped) • 4 Green Chilies (chopped) • Salt (to taste)
How to make Coconut Corn:
Immerse corns in water in a large saucepan and boil until the corn kernels turn soft. Remove and slice the corns into thick round pieces.
Heat oil in a pan and crackle mustard seeds.
Add curry leaves and fry for 1 minute.
Stir in tomatoes and salt. Cook till the mixture thickens, on low flame.
Mix coconut milk with gram flour in a bowl.
Pour into the tomato mixture, along with corn, coriander leaves, and green chilies. Cook on medium flame until thickened.
Serve hot.

COCONUT AVAL RECIPE

Ingredients:
• 2 cups Aval (flattened rice) • 1/2 cup Coconut (grated) • 2 tsp Coconut Oil • 1 tsp Ghee • 1/4 tsp Mustard Seeds • 1/2 tsp Bengal Gram Dal • 1/2 tsp Urad Dal • 2 Red Chilies (chopped) • 2 Green Chilies (chopped) • A few Curry Leaves • 2 tbsp Cashews • A small pinch Hing • 1 tsp Salt 
How to make Coconut Aval:
Soak aval along with salt in 1/4 cup of water for 10 minutes.
Now heat coconut oil in a pan on low flame.
Add hing, curry leaves, mustard seeds, urad dal, Bengal gram dal, red chilies, green chilies and grated coconut to the oil.
Fry until coconut turns slightly brown in color.
Now add soaked aval to the above, and stir it well for 5 minutes.
Fry cashews in a little ghee, and add it to the above.
Serve hot with any chutney.

CHIROTI RECIPE

Ingredients:
• 1 Cup maida • 1 Cup fine Semolina • 1/2 Cup rice flour • 1-1/2 Cup Ghee • Salt to taste • Oil for frying

For Badam Milk: 
• 40 Badam • 1 Litre, half cream milk • Few strands of Saffron • Sugar to taste
How to make Chiroti:
Soak the badam in warm water for 30 minutes.
Peel and grind to make a fine paste.
Bring the half cream milk to boil, add badam paste, sugar and saffron to it and simmer, keep aside.
Take a bowl and combine maida, semolina, 1/2cup ghee and salt in it.
Make soft dough, set aside for about 30 minutes.
Make 10 small balls from it and roll to chapatti’s size.
Combine ghee and the rice flour to make a fine paste.
Spread this paste on each of the chapattis and manage one above the other and roll it like a Swiss roll.
Slice the roll into 2 inch size pieces and press lightly on swiss roll and flatten to make a small poori.
Take a pan and heat oil in it.
Deep fry the pooris, sprinkle sugar on it.
Phenori is ready to serve with Badam milk.

CHILLI GOBHI RECIPE

Ingredients:
• 1 Cauliflower (pieces) • 3 Onions • 3 Green chillies • 1 Cup gram flour • 1 tsp Red Chilli powder • Fresh coriander leaves • Salt to taste • Oil for frying
How to make Chilli Gobhi:
Cut cauliflower into pieces.
Chop the onions and green chillies.
Mix flour, red chili powder and salt.
Prepare batter of thick consistency.
Dip cauliflower pieces in the batter.
Deep fry the cauliflower pieces in oil.
Heat the oil.
Add chopped onions and green chillies till it turns golden brown.
Add fried cauliflower and saute for few minutes.
Adorn with fresh coriander leaves.
